How to Make Dipping Chocolate


Simply melt 1 cup high-quality milk, white or dark chocolate chips and 1 tablespoon vegetable oil in the microwave for 1 minute, stopping to stir every 15 seconds.

Homemade Chocolate-Dipped Meringues

Prep Time: 15 minutes
Cook Time: 2 hours

Ingredients:
  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • 6 tablespoons sugar
  • ½ teaspoon vanilla
  • 1 dash salt
Instructions:
  1. Beat egg whites and cream of tarter on high in the bowl of an electric mixer until foamy. Beat in sugar, 1 tablespoon at a time; continue beating until stiff and glossy and stiff peaks form. Do not underbeat.
  2. Beat in vanilla and salt.
  3. Preheat oven to 200°.
  4. Spoon meringue into a pastry bag and pipe 1-inch rounds onto a parchment-lined cookie sheet. Bake for 2 hours.
  5. Once cooked, remove from cookie sheet and dip the bottoms into melted chocolate.
  6. Set on parchment paper until chocolate hardens. Serve and enjoy!

Mardi Gras Baked Doughnuts

A few years ago I had the opportunity to visit New Orleans during Mardi Gras and it was absolutely spectacular. My experience was unique because I was able to be a part of Mardi Gras with local NOLA residents, which is a completely different experience than the Bourbon Street Mardi Gras celebrations most tourists partake in. In New Orleans, Mardi Gras is all about food and celebrating. The trip was my inspiration for these Mardi Gras doughnuts. Yield: 3 dozen doughnuts

Prep Time:30 minutes
Cook time:20 minutes
Ingredients:
¾ cup butter, softened
1 ¼ cup sugar
2 eggs
1 cup buttermilk
3 cup all purpose flour
4 teaspoons baking powder
1 tablespoon vanilla
½ teaspoon salt
For the glaze:
2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Purple and yellow food coloring
For colored sugar:
¼ cup granulated sugar
Green food coloring

Directions:

Preheat oven to 350°F
In the bowl of an electric mixer, place softened butter, sugar and eggs. Mix until mixture is light yellow in color, approximately 3 minutes.
Slowly add the buttermilk. Mix on low until well incorporated.
Add the flour, baking powder, vanilla and salt. Mix on medium speed for 3 minutes, until a soft batter has formed.
Prepare a doughnut pan by spraying with non-stick cooking spray. Using a small spoon, fill each section of the doughnut pan ⅔ full.
Bake for 20 minutes, or until doughnuts are cooked through.
Remove from pan immediately and place on a wire cooling rack.
Repeat until all the doughnuts are baked.
These can also be made in a muffin tin. Simply increase cooking time by 3-5 minutes.

For the glaze:
In a medium bowl combine powdered sugar and milk. Once the glaze is formed and no lumps appear, add the vanilla.
Divide the glaze into 2 bowls equally. In one bowl stir in the purple food coloring. In the other, add the yellow.
Brush each doughnut when warm with yellow glaze. Drizzle purple glaze over half of each doughnut.
Mix ¼ cup of granulated sugar with a small amount of green food coloring. Sprinkle green colored sugar over the remaining half of the doughnuts.

Which City Has the Biggest Sweet Tooth?

Have you ever wondered which of America's 100 most populated cities has the biggest sweet tooth? We have. To find the answer, we did a little online sleuthing and applied our own special algorithm.

Our Sweet Science:

Using Google keywords, we were able to see how many people within a city searched for the terms “chocolate” and “bakery.”
Then, using Facebook ad research, we investigated how many of each city’s residents “like” the product pages of select chocolate brands.
Finally, we used Yelp to count the number of dessert places in each city.
After establishing a ranking in each category, every city was given a score (from 1 to 100). That score was then calculated into an average, with the lowest average deciding the number one spot on our list. Here’s our countdown of the top 10 cities and how they ranked (on a per capita basis):

Richmond, the first (and smallest) city on our list, is home to an impressive number of sweets lovers. Our research showed that there are numerous cupcake shops to be found throughout the city, telling us that residents certainly value the sweetest of treats (with plenty of frosting and sprinkles, of course). We also learned that they adore chocolate, ranking 12th in how often they search for it on Google.

9. Cleveland, OH

When we looked at Cleveland’s most popular dessert destinations, we learned that the city’s residents have some unique choices when they want to satisfy their sweet tooth, like gourmet popcorn that tastes like cotton candy or strawberries and cream. This city also loves to indulge in chocolate, as it ranked 13th in page likes on the Hershey® Company’s page.

8. Las Vegas, NV

Bright Light City has a lot of 24-hour options for satisfying sweets cravings. Whether they’re kicking off their day, or wrapping up a night of entertainment and gambling, when Las Vegas residents and visitors want to indulge in something decadent chocolate is a popular choice. Las Vegas residents have proven their love of Hershey’s by ranking sixth in likes on the company’s Facebook page.

Whether it’s an early-morning muffin or a late-night cinnamon roll, it’s clear that citizens of the Land of 10,000 Lakes value their sweets. And because it’s only hot enough for ice cream a few months out of the year, residents of Minneapolis tend to search for warmer and heartier treats. We discovered that bakeries and coffee bars are very popular here, as evidenced by the city’s second-place ranking in searches for bakeries on Google.

6. Cincinnati, OH

Cincinnati residents have strong opinions about ice cream. One of the city’s most hotly debated topics is “Which ice cream shop is best: Graeters or Aglamesis?” The topic was even featured on an episode of the Food Network show “Food Feuds.”  No matter which side of the argument they fall on, we’re guessing that citizens of the Queen City are partial to Reese’s® candy as a topping, since they ranked fourth in liking that page on Facebook.

With the holiday season behind us, I'm looking for new reasons to get together with friends and family. This time of year, televised award shows and the big game are fun excuses to invite folks over. Getting together to cheer on our favorite teams or entertainers adds excitement and merriment to the winter months.

Since the Oscars are about a month away, I decided to plan a small celebration with some close friends. They are in charge of snacks, and I’m taking care of desserts.
I thought these wedding strawberries would be perfect. Decorated with black ties and pink pearls, I’m certain they will take home the award for best dressed!
To complement the strawberries, I will also be serving strawberry cupcakes. For a celebratory twist, I tossed some sprinkles in the batter to turn them into Strawberry Confetti Cupcakes.
I don’t know about you, but typically I prefer using boxed cake mix rather than making a cake from scratch. Over the years I figured out a trick to make the box cake a bit more rich and flavorful. I substitute butter for the oil and use whole milk instead of water. The extra fat gives the cake a homemade taste.
Finally, to finish off the dessert table, I styled everything with this beautiful gold cake stand for added luxe. Some coordinating flowers keep things fresh.
